Clarification Step

Wine clarification aims at the removal of yeast, bacteria, and other colloidal particles that might affect wine clarity and stability. It can be reached using different technologies:

 

  • Depth filtration uses a thick filter medium (filter sheets) that traps impurities as the wine flows through it. This technique is highly effective for removing larger particles and is often used for pre-filtration. As it’s an open system wine, cannot be blaketing with nitrogen and requires high operator time.  

  • Bachwashable filter cartridges made of PP depth or surface media like PBP or PFP filter elements. As closed systems, can be saturated with nitrogen avoiding oxygenation and automatic phase can reduce the environmental impact on water consumption

  • Crossflow filtration is an advanced technique that uses a tangential flow approach, allowing the wine to move across the filter membrane rather than directly through it. This method reduces clogging, making it a more efficient option for filtering large volumes of wine. Crossflow filtration systemsare also advantageous as they reduce wine loss, which is a critical factor for wineries aiming to maximize yield.

Surface filtration

Surface filtration, also known as membrane filtration, is used for finer filtration after clarification . Here, a membrane with precise pore sizes traps particles on the surface rather than throughout a thick medium. This technique is particularly useful for removing smaller particles and providing the final polish to the wine before bottling. There is also Microfiltration. Microfiltration is a type of surface filtration, that is commonly applied to achieve a microbiologically stable wine by removing remaining yeast and bacteria.
